The Truffle Calendar

Fresh truffles are harvested throughout the year in Tuscany. Each season brings a different variety with its own distinct aroma and flavor profile.

Autumn (Oct – Dec)

White Truffle
Tuber Magnatum Pico

The undisputed king of truffles. Extremely rare, highly aromatic, and globally prized. Harvested in San Miniato's damp forest floors. Always shaved raw over hot dishes to release its volatile aromas.

Winter (Dec – Mar)

Black Winter Truffle
Tuber Melanosporum

Also known as the black diamond. It has a rich, earthy, sweet aroma reminiscent of cocoa and forest leaves. Unlike the white truffle, its flavor develops beautifully when slightly warmed in cooking.

Summer (June – Aug)

Black Summer Truffle
Tuber Aestivum

Features a milder, hazelnut-like fragrance and a firm texture. It is a fantastic introduction to truffles, perfect for summer salads, pasta, and light appetizers in the warm Tuscan sun.
